Creamy Potato Salad

Ingredients
  • Approx. 6 lbs. RED potatoes–cooked, cooled, and sliced
  • 1 C. celery chopped
  • 3/4 C. onions, chopped small
  • 2 boiled eggs, chopped
  • Dressing:
  • 2 1/2 C. mayonnaise
  • 2/3 C. sweet pickles, chopped finely
  • 4 tsp. sugar
  • 2 tsp. celery seed
  • 4 tsp. gr. dry mustard
  • 4 tsp. cider vinegar
  • 2 1/2 to 3 tsp. salt (to taste)
Instructions
  1. Mix dressing together
  2. Add celery and onions to potatoes.
  3. Add boiled eggs to potatoes.
  4. Add dressing and mix thoroughly.
